Cooking classes at Il Fiorello

Culinary enthusiasts and home cooks alike are invited to take part in cooking classes at Il Fiorello Olive Oil Company.

Il Fiorello’s hosts a variety of both monthly and special culinary classes with Executive Chef Marvin Martin. Martin, a master chef, culinary educator and olive oil expert, has a 20-year tenure as a chef for Robert Mondavi Winery and has also worked on a number of public and private events in both the United States and Europe.

The next class, on April 12, will be a hands-on butchery class in Il Fiorello’s teaching kitchen, located at its tasting room at 2625 Mankas Corner Road in Fairfield.  Martin will guide participants through the process of breaking down their own whole chicken. He will also demonstrate a whole salmon and sub-primal beef butchery. Visitors will learn meat cutting skills, knife safety and sanitation, cooking techniques, and ways to re-purpose meat scraps. Each participant will go home with their cut chicken, a cut of beef and a portion of salmon.  Cost of the class is $75.

Il Fiorello also offers monthly classes through its Kitchen in the Grove series. These include both demonstrations and hands on work as participants watch Martin’s techniques and also create their own masterpieces. As Il Fiorello owners Ann and Mark Sievers explain on their website, “we eat together, laugh together and enjoy food and wine pairings together.”

The next Kitchen in the Grove culinary class will focus on mushrooms. It will be from 3 p.m. to 6 p.m. April 27 and is being offered in partnership with Mycopia Gourmet Mushrooms.

Participants will learn about the myriad of mushroom varieties, cultivation, foraging, and culinary use. A six-course mushroom feast will be prepared and enjoyed.  Guests will enjoy the menu with a selected wine pairing and take home all recipes prepared. Cost for the class is $75 and seating is limited. Reservations are required and can be made by calling 707-864-1529.

Additional Kitchen in the Grove classes include Venetian Cuisine on May 25 and French Provencal Cuisine on June 29.
